The 43-year-old on Thursday faced the Southport Magistrates Court on two counts of stealing.
While no conviction was recorded for the incidents on January 31 and February 13, Mercer will have to pay $697.50 to the retailer.
Mercer, who won the Australian open ironman titles in 1989 and 1995, is the brother of fellow ironman champion Darren and uncle to rising star Jordan Mercer.
He was born in Bulli and grew up in Thirroul, his home club for 20 years before he and Darren joined Queensland club Maroochydore.
His niece had her own court appearance in November as she tried to overturn a ban imposed by Surf Lifesaving Australia for an alleged code of conduct breach at last year’s world championships in Adelaide.
