Setting up shop in the laneway behind the Illawarra Performing Arts Centre, the cafe’s sprawling open-plan layout lets customers watch the bread being baked or coffee beans roasted.
“If we can make it on site, we will,” owner Shane Jaque said.
Giant wooden front doors – 150 years old and sourced from Wooloomooloo wharf – stand guard over the entrance.
Inside it’s a blend of rough wood and slick industrial-style surfaces, with leather couches and pinball machines, and a huge mural on the wall.
The cafe officially opened for business on Monday morning, with big crowds packing in all through the day.
Three Chimneys is open from 7am every morning and until midnight on weekends.
