An Engadine woman, 36, was driving in an easterly direction at about 6pm when she came across the cow in the middle of the road.
She swerved to try and avoid hitting the cow but collided with it and pulled over to the side of the road.
A second vehicle driven by a 58-year-old Barrack Heights woman, crashed head on into the animal, shattering the front windscreen and damaging the roof.
The cow died on impact and the woman’s airbag deployed.
Police said the driver was showered in glass but was not injured.
“Fortunately, the cow has not entered the cabin of the vehicle,” police said.
The woman managed to manoeuvre her vehicle off the road and onto the grass embankment.
Police spoke to nearby farmers who said the cow did not belong to them.
