The markets will be held on the first Friday of the month until March, at Flagstaff Hill.
International flavours from gozleme to dumplings, pizza to French Canadian cuisine, will be available at the picturesque beachside spot.
“The Twilight Markets are always a hit. There’s a huge range of flavours from around the world,’’ said Wollongong City Council Lord Mayor Gordon Bradbery .
The Leukaemia Foundation’s Light the Night will join the markets on top of the hill.
The food markets open at 5.30pm, running until 8.30pm.
