Home brewer Phillip O'Shea has lodged a development application with Wollongong City Council to start up a small brewery at the southern end of Keira Street.
Mr O'Shea said when it came to naming his brewery, he had looked to the stack for inspiration.
"The name of the brewery we're looking to launch is Stack Brewing," he said.
"It's a bit of an ode to the Port Kembla stack that was removed from the skyline not too long ago and we thought we'd like to do something to recognise that."
Mr O'Shea, who also runs the mail order beer website Crafty Brew, said naming the brewery after the stack was part of his plans to ensure it had a strong connection to the city.
"I think one of the really positive things about brewing on a small scale is you're really trying to get the local community around to support you," he said.
"One of the ways to do that is by making sure the local area is represented in the naming and the inspiration behind a lot of the beers you actually produce, so that's going to be an ongoing thing for us."
Mr O'Shea said all the brewing equipment was ready to go; he just had to wait for various government bodies and agencies to give him the tick.
While he said getting a liquor licence was taking longer than expected, he was hoping to make the first Stack Brewing beer before the end of the year.
It would be only the second brewery in the city, after the Illawarra Brewing Company.
But just brewing 500 litres at a time, Mr O'Shea estimated that Stack would be about a quarter of the size of its potential competition.
