The 30-year-old played 16 games for the Dragons this year, largely as a back-up to starting rake Mitch Rein, after joining the club from the English Super League at the end of 2014.
Coach Paul McGregor preferred Craig Garvey in the back-up role over the latter half of the season while Mitch Rein finished the season as an 80-minute player.
The Dragons have signed Kiwi Test hooker Siliva Havili from the Warriors next season and a reduction in the interchange will make it difficult see most clubs to carry an extra hooker on the bench.
L’Estrange played 93 NRL games in 10 seasons with the Roosters, Sea Eagles and Dragons during his career, which included a grand final victory with Manly under Des Hasler in 2008.
He also played 99 games for Bradford in the English Super League to bring his tally of top-flight games to a hefty 192 matches.
