The kids are satisfied that they are receiving a sweet “lolly” treat and I am satisfied that they are consuming nothing other than pure “health boosting” gelatin and fresh seasonal fruit. Win, win!
More and more research is indicating the plethora of health benefits we can obtain from including more gelatin in our diets.
Gelatin has been linked to improved skin, hair and nail growth; maintenance of strong, healthy joints and aiding with joint recovery; improving digestion by lubricating the digestive tract; improved metabolism and weight regulation; improved immune function; improved sleep quality and ease of sleep; and assisting with building muscle, just to name a few.
In a nutshell, gelatin is pretty damn good for us. The key is to finding a good quality powdered gelatin. Don't skimp and buy the cheap gelatin loaded with chemicals and additives found at most grocery stores for a few dollars.
Go for good quality gelatin obtained from grass fed animals such as Great Lakes Gelatin, which you can purchase online.
Gelatin is super simple to work with.
All you need to do is mix it with some liquid, heat it to dissolve and then add more of your desired flavored liquid/puree to make jellies or gummy lollies.
The more gelatin you use, the more solid the outcome. Place in the fridge to set, and that's it!
Ingredients
1/2 cup water or coconut water (if you prefer)
Three tablespoons of gelatin powder
1-2 teaspoons of honey or rice malt syrup (optional and to taste)
1/2 cup pureed fruit (strawberries and other berries are our favourite - oh, and mango, yum!)
Method
Puree fruit in a stick blender or a mini food processor to create a consistency similar to apple sauce or a little thinner.
In a small saucepan, whisk the water, honey and gelatin and heat over low heat until the gelatin has dissolved.
Pour the pureed fruit into the gelatin mixture and whisk to combine well (working quickly).
Pour the mixture into silicon moulds or a square baking tray and pop in the fridge for one hour or so to set. Cut into bite sized squares once set if you used your baking tray.
These gummy lollies will keep in the fridge in an airtight container for two weeks, however I doubt they will last that long once your kids get their hands on them.
