All kids love to have a treat or two packed alongside their vegie sticks, fruit, cheese pieces and sandwiches to devour at lunch.
And with these nutritious options, you can feel good knowing you are providing healthy, wholesome treats for the kids free from additives, preservatives and nasty refined sugars.
By replacing high sugar, highly processed foods such as package biscuits, cakes and chips with homemade wholesome treats made from nutrient dense ingredients such as seeds, nuts (if permitted), coconut and preservative free dried fruit, you will not only save yourself a load of money, you will also give your child the best opportunity to maintain stable energy levels and concentration throughout the school day to make the most of their school experience.
Oh and did I mention you will also save yourself the recurring “ground hog day” that is the after-school munchies, as your cherubs will be fuelled by a combination of healthy fats and proteins (rather than sugar and simple carbohydrates) to keep them fuller for longer.
So go on, get your cook on and whip some of these healthy lunch box options up and pop in the freezer ready to be pulled out at the start of each day for a lovely little treat for your precious little ones.
Fig and Seed Cookies
Makes 6-8 cookies
- 6 dates
- 6 figs
- 1 cup desiccated coconut
- 1.2 cup sunflower seeds
- 1 tsp cinnamon
Method
Preheat your oven to 180˚C.
Place all ingredients in your food processor and blend until well combined.
If required add an extra fig or two to make the mixture stick together.
Roll teaspoons of the cookie dough into balls and then flatten slightly using the back of a fork.
Bake in the oven for 15 minutes, or until golden.
Choc Chip Cookies
Makes 6-8 cookies
- ¼ cup cacao nibs
- 8 medjool dates
- 1/3 cup hulled tahini
- 1/3 cup coconut flour
Method
Blend all ingredients in the food processor until well combined.
Shape mixture into small cookie rounds and cook for 15 minutes, or until golden brown.
