Meditate, yoga, breathe deeply, soak up some sunshine, visit a friend, write in your gratitude journal? Me, I turn to food. And not your typical ‘comfort’ food. I turn to what I call my ‘Soul Bowl’.
This dish never fails to raise my moods, re-energise my body and light up my soul. Doesn’t matter if it is a hot summer’s day on the peak of winter, this dish evokes happiness every single time. It’s winning combination is in part due to the beautiful, bright colours of the dish, along with the taste explosion that comes from mixing all the gorgeous veggies together in one sensational mix.
Add to that the awesome array of phytonutrients you receive from this dish and you have a winning mind, body, soul dish.
So go on and try it. It is some serious soul medicine in a bowl to brighten the dullest of days. Enjoy!
Ingredients:
- 1 cup roasted sweet potato or pumpkin cubes (roasted in coconut oil with a sprinkle of paprika - 180˚ for 25-30 minutes)
- ½ head of broccoli, florets steamed (4-5 minutes in steamer)
- Handful of baby spinach or lettuce
- 6 cherry tomatoes, halved
- ½ avocado, sliced
- ¼ cup purple sauerkraut*
- ½ cup of green hummus (see recipe at www.lifewellnessco.com)
- 1 egg
- Sprinkle of fresh or pickled chilli
- Lemon wedges (2)
- Handful of sunflower seeds and dulse flakes to serve (optional)
Method:
Place your spinach / lettuce in the base of gorgeous serving bowl. Mentally divide your bowl into sections and in separate mounds place your broccoli, tomatoes, avocado, sauerkraut, hummus and sweet potato.
Top the salad off with your perfectly poached egg (cooked for 3-4 minutes in boiling water with a dash of vinegar). Sprinkle a handful of sunflower seeds (or pepitas), pickled chillies and a dusting of dulse flakes on top to make it even prettier. Season with salt and pepper and then serve with a lemon wedge or two on the side.
