When I was thinking about what breakfast I would like my gorgeous cherubs to whip up without wreaking havoc in the kitchen my mind went straight to a steaming bowl of creamy porridge and a cup of tea. My mind went to porridge because it is a one-pot-wonder that doesn’t take many culinary skills to create meaning I wouldn’t be required to get out of bed to instruct them; secondly because I was thinking about minimising the collateral damage of my three boys (husband included) in the kitchen; and thirdly I wanted something that doesn’t spill easily when the boys decide to all clamber into bed with me. So there came about the idea of tea infused porridge. The chai infused milk takes plain old porridge to a new taste sensation. I use almond milk as it adds a rich, nutty depth of flavour, however if you only have dairy milk that will work as well. Finish the dish off with oven baked pears or berries for a touch of sweetness and a large dollop of yoghurt and a sprinkle of cinnamon.
Ingredients:
- Porridge
- 2 teaspoons of chai tea mix (loose leaf)
- 1 teaspoon of honey
- 1.5 cups of almond milk
- 1 cup of rolled oats
- Baked Pears
- 1 ripe pear (cut in half)
- 1 teaspoon of honey
- Sprinkle of cinnamon
Method:
Combine tea mix, honey and milk in a small saucepan and gentle heat over low-medium heat until warmed through and infused (five minutes).
Meanwhile, whilst the tea is infusing, cut the pear in half, drizzle with honey and sprinkle with cinnamon and place in a moderate oven (180˚C) to bake for 15 minutes, until softened.
Strain the milk through a tea strainer to remove the loose leaves and then combine oats and milk in the same saucepan and heat gently over low-medium heat, stirring frequently until you achieve a creamy consistency. The milk will absorb into the oats so it is important to stir, otherwise it will clump.
Transfer to a serving bowl, top with the baked pears, drizzle some more honey, sprinkle with cinnamon and add a dollop of yoghurt.
