Fullback Adam Quinlan scored twice in 12 minutes in the 48-4 victory.
Conceding after just five minutes, the Cutters hit back to pile on four tries before the break, with Levi Dodd, Shannon Wakeman, Sam Coster and Jacob Host scoring.
Quinlan then ensured the Newcastle floodgates opened at Hunter Stadium with his double.
Illawarra Coal League talent Mitch Porter cashed in with his first try for the Cutters, before centres Taane Milne and Kurt Mann completed the demolition job.
The Knights had a couple of chances to steal a late consolation, but the Cutters held out.
The win means Illawarra move into third on the Premiership NSW ladder, moving ahead of Wests on for-and-against and leapfrogging Newtown and Wyong.
