Nothing quite beats the aroma of freshly baked banana bread. It is such a comforting, homely smell that always makes me smile. I love baking banana bread on the weekend, taking great pleasure in throwing open my windows and doors sending the happy aroma floating across the neighbourhood. Watching people breathe in the sweet scent as they walk past leading to a smile crossing their faces also.

This particular paleo-inspired banana bread recipe has been tweaked to allow enough mixture for either a banana bread loaf, eight individual friands or 10 mouth-watering muffins for those requiring a little banana bread happiness to brighten their day.
These friands deliver on taste and moistness, and along with producing the best aroma ever, they also provide nutritional value due to the combination of nuts, seeds, coconut oil, fresh banana and eggs in the mix. It trumps most traditional banana bread recipes out there on both the nutritious and delicious front.
Makes eight friands / Prep: 10 mins / Cook: 30 mins
Ingredients:
- 2 cups almond meal
- 60g tapioca flour
- 1½ tsp bicarb soda
- ¼ tsp salt
- 1 tbsp chia seeds
- 1/3 cup honey
- 3 tbsp coconut oil, room temperature
- 1½ tsp vanilla powder
- 3 eggs
- ½ cup milk (I use almond but any will do)
- 3 ripe bananas + 1 extra for topping
Method:
Set oven to 180˚C. Grease an eight-hole friand tin with butter or baking paper. In a mixing bowl, combine almond meal, sifted tapioca flour, bicarb soda and salt.
In a separate mixing bowl, beat honey and coconut oil together for 2 minutes using an electric mixer, until creamy. Add vanilla and eggs and beat for a further 2 minutes. Pour wet mixture into meal mixture and beat to combine. Slowly add the almond milk and mix with a wooden spoon until combined.
Mash 3 bananas in a separate bowl and then add to the mixture, gently folding to combine. Pour or spoon the mixture into the prepared tin, dividing the mixture evenly across eight moulds and top each friand with a slice of banana.
Bake for 30 minutes, until the tops of the friands are golden and a toothpick inserted into the centre comes out clean. Transfer to a wire rack and allow to cool completely before serving.
