This recipe combines the delicious flavours of the Mediterranean in a healthy and hearty seafood dish that both looks and tastes divine, as well as being super good for you. Combining a handful of real food ingredients, this dish is super simple to make and is a lovely way of transporting you to the middle of the Mediterranean through tantalising your tastebuds with the classic flavours of tomatoes, garlic, parsley, feta and wine.

Not a fan of prawns, no worries, replace the prawns with either cubed firm white fish (cod, snapper, ling etc) or black mussels for an equally delish Mediterranean meal.
Serves 2
Gluten Free
Ingredients:
500g peeled green prawns
1 onion, chopped
1/4 cup parsley, chopped
1 clove garlic, minced
1 tin diced tomatoes
2 fresh chopped tomatoes (or another tine of diced tomatoes drained)
1 cup dry white wine
1 cup crumbled feta
Salt to taste
Method:
Preheat oven to 180°.
Heat oil in a large fry pan on medium heat. Add onion and saute until softened (approx. 7 minutes). Add parsley and garlic and mix through onion.
Add fresh and tinned tomatoes along with white wine and cook for approximately 20 minutes - until liquid is absorbed by half. Season to taste.
Add prawns and cook for 1 minute before transferring to a casserole dish (or individual serving ramekins). Top with crumbled fetta and bake in the oven for 10 minutes, until feta is golden.
Serve with crusty sourdough (to soak up leftover sauce) and a lovely green side salad. Oh, and don’t forget the glass of vino. We are channelling the Mediterranean lifestyle after all!
