Brad Sloane started his apprenticeship at Silos Restaurant and Winery on the NSW South Coast. Winning apprentice of the year at 21, Sloane travelled to further his career, with highlights including working for Marco Pierre White at The  Belvedere in Holland Park, London. Returning to Australia he worked at Hugo's Bondi Beach and alongside Matthew Kemp at Balzac before taking over Balmain's The River View Hotel as head chef. In 2012 he was named AHA Chef of the Year while working for the Balmain Pub Group, where he is currently the executive chef overseeing the group's four establishments.
