Brad Sloane started his apprenticeship at Silos Restaurant and Winery on the NSW South Coast. Winning apprentice of the year at 21, Sloane travelled to further his career, with highlights including working for Marco Pierre White at The Belvedere in Holland Park, London. Returning to Australia he worked at Hugo's Bondi Beach and alongside Matthew Kemp at Balzac before taking over Balmain's The River View Hotel as head chef. In 2012 he was named AHA Chef of the Year while working for the Balmain Pub Group, where he is currently the executive chef overseeing the group's four establishments.

BEST TIME TO VISIT
The best thing about the inner-west is that it caters for everyone and any time of year. There are rooftop bars, fireplaces to stay warm, inside and outside dining areas or beer gardens, which make it accessible and suitable for any occasion.
In summer I would recommend the rooftop bar at Websters to soak in the rays on a Saturday afternoon, or catch the ferry over to Balmain and walk Darling Street for Sunday brunch to find a nice favourite along the way.
