Cantonese cuisine master Mok Kit Keung is executive chef of the Michelin-starred Shang Palace at the Kowloon Shangri-la, also overseeing all the Chinese cuisine at the hotel. He was previously chef de cuisine of Marina Bay Sands, Singapore.
