Officers were called to the Helensburgh zoo about 8am on Saturday after staff discovered the pygmy marmosets missing.
The three monkeys - including an adult male, a female juvenile and a four-week-old baby - were taken from their enclosure, which showed signs of forced entry.
The younger animal is at a particularly fragile age and needs to be reunited with its mother in order to be fed.
This is the third time that monkeys have been stolen from Symbio.
Police are conducting an investigation into the theft and would like any person with information to call Wollongong Police or Crime Stoppers on 1800 333 000 or use the Crime Stoppers online reporting page.
