Last weekend I stumbled across the cutest little wholefoods cafe in the most unexpected of places. Whilst travelling to an unfamiliar outer suburb of Melbourne I landed upon a hidden gem of a cafe named 'Plenty of Everything'.

This cafe was so awesome, I ate my next four meals there between my gruelling conference sessions. It became my little retreat from work, nourishing my body and with nutrient-dense foods inspired by seasonal produce.
One of the best dishes I sampled whilst there was a cleansing and energising raw salad with a base of broccoli and zucchini noodles. Since coming home I have played with these base ingredients, adding a few extra nutrient dense ingredients to Plenty of Everything's base salad, to make it a little more quirky and even more delish.
So with much gratitude for the inspiration, I have come up with my own take on a raw green salad which I have fondly called 'Superboost Salad'. I hope you enjoy it as much as I do.
This recipe makes enough for two.
Ingredients:
1 head of broccoli, cut into small florets
2 zucchinis, thinly sliced (mandolin) or spiralised
6 cherry tomatoes, cut in half
2 tbsp raw seed mix (peptias, sunflower seeds, sesame seeds, poppy seeds - whatever you have on hand)
1/3 cup raw nuts (cashews, almonds or macadamias)
2 tbsp raw cranberries
Dressing
1 avocado
Juice of 1 large lemon
1 tbsp tahini
Pinch of salt
Method:
Place all salad ingredients in a large bowl. Toss to combine.
Place dressing ingredients in a mini food processor (or stick blender) and blitz until smooth and creamy.
Drizzle dressing over salad ingredients and toss well to ensure an even coating.
Divide salad into two bowls for serving. Add seasoning to taste.
