As we all know it can be a challenge every day keeping your little ones not only entertained, but fuelled up for all their school holiday fun.
So let me take the pain out of at least one of the school holiday challenges for you.
Here is one of my favourite recipes for cookies that are so chock full of goodness that they will be sure to keep the kids going for ages.
Not only do they contain a great combination of healthy fats, protein and carbohydrates, but they also taste absolutely fantastic.
I am yet to meet a kid that doesn't like these cookies.
What's not to love?
Chocolate and peanut butter in any form is always a winner, right?
Oh and the other bonus, they take less than 15 minutes to whip up.
You’re welcome!
Peanut Butter Cookies
Makes 10 cookies
Ingredients:
1 cup almonds
1 1/2 cups of medjool dates (pitted)
2 tbsp natural peanut butter
2 tbsp raw cacao
Method:
Preheat the oven to 180 degrees and line a baking tray with non stick baking paper.
Pop all the ingredients in a high powdered full processor or blender and blitz until well combined.
Using your hands, roll spoonfuls of mixture into rounds and then squash down into a flat disc around 1cm deep.
Place them on the baking tray and then pop them in the oven for 10 minutes.
Allow to cool before serving them up with a glass of milk.
These babies will be gone in an instant, trust me.
