Salmon is my idea of a superfood. Chock full of omega 3 fatty acids which helps to improve our moods, reduce our risk of cardiovascular disease, improve our cognitive function as well as aiding to reduce inflammation throughout the body....and much more. There are loads of other health benefits, too many to mention here, but let me assure you salmon is super good for you.

In my household we have salmon at least once per week, not just because it is so nutritious but also because it is just so super delicious. But like most things, we can get bored of having the same meal week in week out so we like to mix it up a little by adding some marinade one week, oven roasting the next, making salmon patties the next or throwing it on the BBQ with some fresh lemon.
This recipe is for a delicious marinated pan fried salmon which is best served with either a lovely light side salad, or served on top of a fragrant bowl of coconut rice with an extra splash of tamari drizzled over the top.
It is super quick to make, taking less than 10 minutes to whip up from start to finish, so it is a great mid-week salmon meal that the family will love.
Ingredients: (serves 2)
2 salmon fillets
1/3 cup tamari sauce (or soy sauce)
1/3 cup honey
1 clove garlic, crushed
1 tbsp butter / ghee or coconut oil for cooking
Method: Dice the salmon into bite sized pieces using a sharp knife and place in a shallow dish.
Place the tamari, honey and crushed garlic in a small jar and tighten the lid and shake, shake, shake until the contents are well combined making a smooth marinade. Pour marinade over the salmon and let it sit whilst you heat up the pan.
Melt the butter or oil over medium heat and then add the salmon pieces. Cook for 1-2 minutes before turning to cook for a further minute. Don't leave it any longer as the salmon will dry out and you want it super tender and moist.
