The truck was carrying a load of frozen goods when it caught alight on the Hume Highway about 8.25am Wednesday.
It crashed into the side of the Wingecarribee River Bridge, coming to rest against the balustrade, with burning matter toppling over the edge.
Emergency services arrived to find the truck well alight.
NSW Ambulance paramedics treated a man believed aged in his 60s for minor injuries. He was transported to Bowral District Hospital in a stable condition.
The crash and fire caused the closure of the highway for much of Wednesday morning.
One lane is open in each direction. Northbound diversions have been lifted.
Part of the trucks trailer fell from the bridge and started a small grass fire, the NSW Rural Fire Service said.
The safety barrier was damaged in the crash.
Emergency services and traffic crews are on site.
