I often get asked what I pack my little cherubs in their school lunch box to keep them energised and alert throughout the day. Aside from the typical fruit and veggie sticks, salad wraps, or last night's leftovers, I also like to pack a whole food treat or two for them to enjoy.

One of their favourites at the moment are my Choc Crunch Bliss Balls. They can't seem to get enough of these glorious little balls of deliciousness, which suits me fine as these treats are super simple (and quick) to whip up, can be frozen ahead of time so I have a stash always ready to grab in the morning at the last minute, and tick all the boxes in terms of providing a healthy dose of nutrition in these bite sized treats.
The beauty of these bliss balls are that they contain a great combination of healthy fats (from the seeds and coconut), fibre (from the dates and seeds), carbohydrates and mood enhancers (from the cacao and seeds) resulting in a delicious high energy snack that provides lasting energy and satiety from hunger.
This recipe can also be used to make seeded choc biscuits if you're little ones prefer baked goods for their lunch box treats. Same recipe, just roll into bite sized biscuits and bake in the oven at 180 degrees for 10 minutes or so.
Makes 8-10 bliss balls or 8 biscuits
Ingredients:
1 cup seeds (peptitas, chia and sunflower seeds work well)
1 cup medjool dates (pitted)
1/2 cup coconut, finely desiccated
1 tbsp raw cacao powder
1 tsp vanilla essence
Method:
Place all ingredients in a small food processor and blend until well combined.
Scoop out mixture using a dessert spoon and roll into bite sized balls.
Coat with extra coconut if desired, or roll in chia seeds for extra crunch factor.
Store in the fridge for up to 7 days or the freezer for up to 3 months.
