Food ideas: Brussels Sprout & Cranberry Salad

With less than four weeks to go till Christmas, it’s the perfect time to start planning your festive Christmas feast to save yourself the stress of last-minute race around. So over the next few weeks leading up to the big day I am here to help you out with some delicious Chrissie-inspired recipes to get you seriously inspired for the big day.

As you know I am a huge fan of using simple whole food ingredients, treating them simply, and letting their taste and textures shine with minimal effort, and that is even more important on Chrissie day to allow us to spend as much time as possible enjoying our family and friends and as little time as possible slaving away in the kitchen.

This recipe is a corker of a Chrissie dish…..it’s full of nutritional goodness, takes minimal time to throw together and also looks super duper festive due to the brilliant bright green hues of the sprouts and chives teamed with the deliciously deep red of the cranberries and golden pine nuts.

It is super versatile too. You can team it with fresh seafood, roast turkey, BBQ meat or chicken. It works well with all of them. Or you could even make it the star of the table and have it as one of the main attractions by whipping up a super big bowl of it.

So here you have it….the first of my festive inspired recipes in the countdown to Chrissie 2017.

Brussels Sprout & Cranberry Crunch Salad

Serves 4 as a side

Ingredients

4 cups brussels sprouts

¼ cup extra-virgin olive oil

¼ cup fresh lemon juice

½ cup toasted pine nuts

⅓ cup dried cranberries

⅓ cup grated parmesan cheese, finely grated

⅓ cup chopped chives

Sea salt to taste

Method: Thinly slice the brussels sprouts using a mandoline if you have one. Place them into a medium bowl and toss with the olive oil, lemon juice, pine nuts, cranberries, parmesan cheese, chives, and a pinch of salt. Let the salad sit at room temperature for 15 minutes, then taste and adjust the seasonings. Finish with an additional drizzle of olive oil if you like.
