This recipe has been developed and refined over many years in search of the perfect whole food Christmas cake, and I can very confidently say that this recipe is an absolute match for traditional Christmas cake in terms of taste and texture, yet it is on a whole other level in terms of the nutritional goodness you get when you enjoy a piece of this delight. This cake is super moist, takes no effort at all to make and is chock full of whole food ingredients that won’t clog your system up this Christmas, like traditional cake does.

An added benefit for this recipe is that unlike many traditional Christmas cake recipes this one can be made as late as Christmas morning if you are not as organised as you’d like to be, or in contrast if you are super organised and want to knock the Christmas cooking over well in advance, then you can cook it and freeze it, then bring it out to thaw on Christmas morning, and it will taste exactly the same. Either way, choose your option, whatever works for you.
Ingredients:
650g mixed dried fruit (we use sultanas, figs, apricots, dates)
1.5 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp ground clove (optional)
1/2 tsp nutmeg
1 tsp vanilla bean paste or extract
Zest and juice from 1 orange
3 tbsp olive oil
3 eggs
2 cups of almond meal
50g pecans or walnuts (to decorate)
Method:
Preheat your oven to 160 degrees C (fan forced). Line a 20cm springform tin with baking paper on the bottom and sides to prevent the cake from sticking.
Dice the figs, apricots and dates and combine with sultanas, vanilla, spices, orange juice and zest in a large mixing bowl. Add olive oil and eggs and mix to combing. Next add the almond meal and again mix to combine well.
Spoon cake mixture into the cake tin and flatten the top using the back of a spoon. Decorate the top of the cake with walnuts, pecans or even dried cherries if you would prefer and then place in the heated oven to bake for 1 hour and 20 minutes. Check the cake after 1 hour to determine if it requires the full cooking time, but inserting a skewer into the middle of the cake. If it comes out clean, it is ready. If not, then put it back in for the full cooking time.
