From its glass temperature controlled cellar to its velvet booths Wollongong’s newest small bar The Night Parrot is providing the city with another unique late night venue until 2am.

The Night Parrot and its 1900s vibe is the brainchild of chef Alex (Choppy) Breslin, Alex Stojanovski and Luke McNamara who wanted to create a cozy, intimate space with great food served in amber lighting and antique Parisian tables.
The three business partners have different backgrounds in the hospitality industry and combined their skills and knowledge to bring the new concept, inspired by bars in Sydney and Melbourne, to life.
Choppy said it was great his two new business partners understood what he wanted to create.
“Alex and Luke believed in my vision and have been amazing helping me bring The Night Parrot to life.
“The wine list is stacked with local and international wines, boutique Australian spirits and is combined with a modern Asian bar menu that celebrates local fresh produce.”

The menu will constantly rotate.
The first week they offered wasabi lobster balls, crispy skin sichuan spatchcock and handmade five spiced lamb dumplings.
Mr McNamara said the custom wine cellar was built using imported technology from USA to control the humidity and temperature within the room.
“There are some amazing small venues in Wollongong, and we are humbled to be a part of the scene, but this cellar allows us to safely store a large selection of wines, and we think this gives us a point of difference from the rest,” he said.
“You can buy a glass of wine for $9 through to really special offerings like a 1971 Penfolds Grange. Of course we’ve got cold beer on tap and a great selection of Aussie spirits for your favourite late night mixers as well. We think the eclectic mix available is something Wollongong is missing.”
The Night Parrot is the first small bar in Wollongong to get a 2am Liqour Licence for Friday and Saturday nights.
“We wanted to offer a venue for those who want to stay out a bit later,” Mr McNamara said.
The Night Parrots is located at 69 Crown Street, Wollongong.

- Friday 4pm – 2am
- Saturday 4pm – 2am
- Sunday 4pm to 10pm.
