Officers stopped a Mitsubishi 4WD on Turpentine Road at Tomerong about 5.45pm on Friday after it was detected travelling at 152km/h in an 80km/h zone.
While the driver - a 29-year-old Cambodian national - was spoken to, police said a second woman was found sleeping in the boot.
The driver was issued penalty notices for exceeding the speed limit by more than 45km/h, and driving with a passenger in the boot. Her NSW driving privileges were revoked for six months.
The incident was one of several cases of "stupidity" on NSW roads during the early stages of the state's Easter long-weekend road safety blitz, Operation Tortoise, one senior police officer said.
"On more than one occasion, police stopped drivers who had unrestrained passengers - some in the boot of their cars, and even one reportedly on the roof," Traffic and Highway Patrol Commander, Assistant Commissioner Michael Corboy, said.
"Sadly, some drivers are ignoring common sense and putting their own lives, their passenger's lives, and the lives of other road uses at great risk of death or injury."
Elsewhere in the state, an 18-year-old male P-plater was fined after he was caught allegedly driving with seven passengers in his Ford station wagon along at street in South Tamworth about 12.30am on Saturday.
Police said five of the passengers were unrestrained and two of them were travelling in the car's rear cargo area.
Also in Tamworth, a woman was charged with mid-range drink-driving after police responded to reports a car was driving with a person riding on the roof early on Saturday morning.
Meanwhile, a motorcyclist was caught allegedly riding at 182km/h in a 100km/h zone on the M1 Princes Motorway at Cataract about 3am on Friday.
Police said the motorcyclist, a 40-year-old Wentworth Point man, held a provisional Queensland driver's licence and was riding a prohibited motorcycle.
Another motorcyclist was charged after he allegedly led police on a pursuit along Shellharbour Road at Warilla on Thursday.
Police will allege the rider reached speeds of up to 140km/h in a 70km/h zone. during the pursuit, which was terminated near the Windang Bridge.
The rider - a 22-year-old Warilla man - was arrested a short time later and charged with police pursuit, driving while his licence was cancelled, and using a vehicle with unauthorised plates.
He was also given a speeding fine.
The man was granted conditional bail to appear in Port Kembla Local Court on May 8.
Double demerits - for all speeding, mobile phone, seatbelt and motorcycle helmet offences - remain in force until 11.59pm on Monday.
A further five-day period of double demerits will run from 12.01am on April 24 until 11.59pm on April 28 for the Anzac Day holiday period.
