The vacationing WIN TV talent and her Wollongong beau have been touring the Indonesian island since July 27.
They were to return to Australia on Friday, but on Wednesday both Virgin and Jetstar cancelled all incoming and outgoing flights on advice from the Volcanic Ash Advisory Centre (VAAC).
Though some flights resumed on Monday, the couple have been told the next available departure isn't until Friday.
"We will have to be careful as the days go on, just in case they cancel flights again ... we have heard that some ATMs have been flushed of money in Kuta, with people struggling to get money out," said Apolloni early Monday, speaking from the beach resort enclave Seminyak, north of Kuta.
"We are a little anxious, hoping we can get an earlier flight out.
"But we are not letting it get to us too much because, after all, there could be worse places to be stranded."
Jetstar and Virgin have advised stranded passengers to stay put and avoid Denpasar Airport.
The ash cloud, originating from Mount Raung in East Java, has been interrupting flights to and from Indonesia since late June.
From Seminyak, the cloud looked little more than an overcast day, Apolloni said.
"We can see a band of thick haze across the horizon," she said.
"There is no odour or volcanic ash floating around.
"The volcano is more than 140 kilometres away, on another island, so we feel quite safe here."
The Bali holiday was a rare shared sojourn for the couple after two years of dating long distance. The former WIN Wollongong journalist moved to Queensland in 2013 after getting tapped for presenting duties on the network's Toowoomba and Townsville bulletins.
