People traveled from the Southern Highlands and Wollongong for what many regard as the best practical training and work ready experience in the country.
Tourism and Hospitality head teacher Sarah Phillis appreciated the generosity of his time in recent months to help staff and students plan, prepare and present a dinner that is always a sellout.
“Troy is an inspiration not only with his personal success..but also his food philosophy and regard for local produce,” Ms Phillis said.
Ms Phillis said it was also another year of providing quality training and opportunities such as the annual scholarship program. It allows students to connect with leaders from within the tourism and hospitality industry.
But it could not have been done without the partnerships with the local food industry.

Mr Webb generally publishes a quarterly newsletter but was so excited for his team and clients he wanted to thank them all as quickly as possible.
“We had mentioned in our last newsletter, that we had been nominated as a finalist in the Momentum Energy 2015 Illawarra Business Awards, in the category of 'Excellence in Small Business',” he said.
“Last Friday night, the winners of the business awards were announced at the annual awards dinner at the Illawarra Performing Arts Centre. And we are thrilled and extremely proud to announce that we won.”
The award means the firm progresses through to the NSW Business Chamber’s annual awards in November.
Mr Webb highlighted two of the main reasons for the family business’s success.
“A business like ours does not exist without quality clients, and business relationships,” he said..
“We have also added this year, a super high quality team of accounting professionals. We thank you all for your support, and for helping us to win this award.”
Halloween Train
The Illawarra Light Railway Museum is doing a “Ghost Train” run to celebrate Halloween this Saturday night.
Brad Johns says planning is also well underway for Tongarra Train Fest “A Day of Diesels” on Sunday November 8.
