Every year we plan to be more prepared for the big day, don’t we? Yet every year it seems to arrive without enough notice for us to feel truly organised. Or is that just me?
I have learnt that one of the easiest ways to prepare for the big day with ease is to start early and make the most of my much loved super sized chest freezer to store my Chrissie treats in so I can just whip them out on Chrissie day, in amongst the chaos of present opening, without missing a beat.
This recipe is one that you can make now and freeze ready for the big day. It is a beautiful Christmas inspired treat that not only looks the part but tastes sensational too.
The cranberries and raw honey impart a delicious sweetness to these little treasures, whilst the pistachios, macadamia nuts and coconut add a good amount of healthy fats to keep our body sugars level following this little indulgence.
The end result is that you will feel loads better indulging in these little Chrissie treats after the festive feast than you would a big bowl of pudding and cream.
These Chrissie inspired bliss balls also make a lovely treat for loved ones, wrapped in some cellophane and adorned with a bright Chrissie ribbon. So give the gift of nutritious deliciousness this Chrissie with these Cranberry & Pistachio Christmas Balls.
Ingredients:
1 & 1/2 cups of desiccated coconut
1/2 cup macadamia nuts
2 tbsp raw honey
1 tbsp cashew butter / or coconut oil
1/2 tsp natural vanilla extract
1/3 cup pistachios
1/3 cup dried cranberries
Optional - extra desiccated coconut to roll in
Method:
Add the coconut, macadamia nuts, honey, oil/butter and vanilla into your food processor bowl and blitz until the mixture is smooth and sticking together when you press it between your fingers. Add the pistachios and cranberries and pulse until the mixture is well combined.
Use your hands to squeeze heaped teaspoons of the mixture into firm balls and then roll in coconut or simply leave as they are. Place the balls into an airtight container and store in the freezer until Chrissie day.
