Co-owner Alex Stojanovski said the food culture in the northern Illawarra suburbs has changed immensely over the last two years and the market has changed, prompting them to rethink what they do.

“Food changes so regularly it’s good to stay proactive rather than reactive, so we’re just looking towards the future,” Mr Stojanovski said.

“From when we first opened to now, the main explosion has been in the coffee culture [in the suburb] but there have been different types of cuisine that has come into the market as well.

“From five years ago, the way the market was to now that’s changed and that’s obviously another reason why we need to change to.”

Mr Stojanovski said he and his business partner Daniel Dafkovski hope to stay in Thirroul but are wanting to take a different direction with their cuisine.

It comes as Shari Aroma Indian Cuisine opening to the public on July 2, filling the space formerly held by Samuel’s on Lawrence Hargrave Drive.

While in February Crust franchisee Anne Doyle opened Escondidos, a Mexican themed restaurant already proving popular with locals.

The Postmans will officially close for good on July 28.

The eatery has been residing in the suburb's former post office, which was also an agent for the Commonwealth Bank during its heyday – including a the bank vault, which became a private dining area.
