From Tuesday through to Thursday, there have been five separate fatal crashes across the state.
The incidents have prompted senior police to issue a warning for all drivers to take responsibility as school holidays come to an end.
About 8.05am on Wednesday, a 74-year-old man died after his Jaguar sedan left the road while travelling south on the Hume Highway at Pheasants Nest.
NSW Ambulance paramedics performed CPR on the man before he was taken to Liverpool Hospital, where he later died.
He was the only person in the vehicle, which was reportedly a Jaguar.
Police are investigating the circumstances surrounding the crash.
A report will be prepared for the coroner.
Elsewhere on Wednesday morning, a 30-year-old man was killed following a collision at Norah Head on the Central Coast.
A 89-year-old woman died in hospital on Wednesday after she reversed from the driveway of a Sylvania home and hit a neighbouring fence on Tuesday.
On Wednesday night, three people died after two cars collided on the Monaro Highway at Michelago.
And police remain at the scene of a fatal crash on the Mitchell Highway at Wellington, which occurred on Thursday morning.
Police investigations into the five crashes continue.
Assistant Commissioner Michael Corboy, of the Traffic and Highway Patrol Command, said these crashes served as a reminder for people to take personal responsibility for their actions.
“To lose seven lives in the course of two days on our roads is nothing short of a tragedy, he said.
“Seven more lives lost means that we have now lost 199 lives on our roads in 198 days this year.”

With the school holidays coming to an end, Assistant Commissioner Corboy said drivers needed to pay attention to ensure they arrived safety at their destination.
“Our message is quite clear,” he said.
“All drivers, passengers, riders, cyclists, and pedestrians should be aware of the risks and not take their road use for granted.
In Howlong, near Albury, a motorbike rider died after a collision with a utility.
Emergency services were called to Lowe Street, near the intersection of Victoria Street, about 8.30pm on Thursday.
The rider, a man believed to be aged in his 20s, died at the scene.
A 28-year-old man riding on the bike was not injured.
Police allege he assaulted the utility driver before stealing his vehicle.
The 65-year-old was taken to hospital with head injuries.
He will undergo drug and alcohol testing.
