Alleged club associate Orlando Carlo Spagnolo has pleaded not guilty to a charge of affray stemming from the July 20 melee, at a Wentworth Street pub.
Police allege the assault was unprovoked and resulted in serious injuries to the victim.
Multiple people allegedly punched the man in the head. Police say the attack ended when his wife intervened by laying on top of him.
Spagnolo, 23 of Yellow Rock, south of Albion Park, was arrested at Lake Illawarra Police Station six days later.
He has since been released bail.
He appeared briefly at Port Kembla Local Court on Wednesday as the matter was set down for hearing at Wollongong Local Court on March 18.
A co-accused, alleged MC club member Jai Clinton King, is due to appear at Port Kembla Local Court October 17.
Spagnolo is to attend another hearing on March 25, for unrelated drug and driving charges, to which he has also pleaded not guilty.
