They've "survived" their first year, so now owners of Wollongong small bar Night Parrot are ready to move to the next level - including staging a food and wine festival.

A new venue manager has come on board, Dave Pearce, to lead the way forward. He has already instigated a series of monthly "takeovers" and other events with visiting chefs and wine experts from leading restaurants in Melbourne and Sydney.
While wheels are in motion for Night Parrot to produce a large-scale food and wine festival at the end of 2019 - though Mr Pearce said he couldn't reveal too much.
The first takeover is by fried chicken king Morgan McGlone of Belle's Hot Chicken and wine merchant Andrew Guard on March 24. Patrons still need to purchase the food and wine as normally would.
Mr Peace said he wanted to "dismantle the fuss that goes with wine" and make these events purely fun.
Night Parrot was opened in March 2018 by three business partners who wanted to create a cozy space with modern Asian cuisine and boutique wine.
"The first year is always a filling out process," co-owner Alex "Choppy" Breslin said. "Now we've survived the first year it's time to really gain some direction."
