The second-grade match between Uni and Shamrocks was called off after Illawarra Rugby Union president Peter Woods collapsed while refereeing the game.
Woods was taken to hospital in an ambulance but was alert and talking to paramedics on the field.
Ultimately Woods' wife decided the match should go ahead and Shamrocks coach Paul Ridgway was proud of the way his side handled the events to claim a 41-8 win.
"It was a pretty tough day today after what happened to Peter and what people had to work through," Ridgway said. "I think we galvanised a little bit around that.
"We were talking about rugby and what it means and the importance of that. I think they took a little bit of time to think about whereabouts rugby sits in all of that and they went out and wanted to prove a point for Peter and his family."
University opened the scoring with a first-minute penalty goal, however that was where the joy would end for the home side.
Shamrocks hit back with four-straight tries to blow their opponents off the park and it was Davis who was instrumental for his team.
The fullback crossed for a double and threatened to break the line every time he touched the football, University defenders regularly clutching at shadows as he ran straight past them.
"Rory is outstanding," Ridgway said. "He's a real handful. What we're trying to do is work him into a position where he gets opportunities against bigger bodies that his footwork and determination in carry can work through.
"That's working for us at the moment, we'll go back and have a look at where else we can work on, but he's impressive at the moment that's for sure."

Uni received a glimmer of hope when they scored on the stroke of halftime to cut the gap to 22-8.
Shamrocks, however, were determined to ensure the Bulls did not pull off yet another come-from-behind victory with Davis crossing for his second early in the second half to put an end to any hopes of a comeback and secure Shamrocks their fifth-straight win.
The Bulls were disappointing throughout the match and were comprehensively outplayed in every facet of the game, with Shamrocks punishing Uni's numerous errors to consign the Bulls to their second-straight defeat.
In Saturday's other matches, Vikings moved up to fourth on the ladder with a 31-14 victory over rivals Kiama, Tech defeated Campbelltown 29-24 and Avondale outplayed Shoalhaven 45-12. Bowral maintained their lead at the top of the table with a 38-17 win over Camden.
