The Devils trailed 4-0 early after centre Colby Pellow was sent to the sin-bin but controlled proceedings thereafter, leveling up at 4-all by halftime and running in two tries in the second stanza to claim the win and top spot on the ladder.
It leaves them the only undefeated team in the competition and the team to catch in the minor premiership race at the mid-point of the season.
Having endured a lengthy run of outs at Gibson Park, coach Pete McLeod was full of praise for his side's effort after absorbing a mountain of early pressure.
"We spoke during the week about how hard it is to come here and win, we've only done it a few times in in the last 10 years," McLeod said.
"We're confident if we come and play good footy, and tough footy against any team in the comp we can get a result. You don't win comps this time of year but I'd rather be winning than losing though so it's good.
"The boys were really excited about coming her and playing footy. They enjoy playing against the best teams in the comp and Thirroul are obviously a really good side.
"It's really hard to get a win here and they challenged themselves today and they're pretty excited to get the points.
"It puts us wherever it puts us on the table but the boys are happy to teat in a get a result. It was as tough a performance as you'll see against a good team so I'm really happy."
The Butchers scored first through winger Tom Simpson after Pellow was dispatched to the sin-bin but the Devils overcame the weight of possession, and a 4-1 penalty count, to hit back through Lachlan Hurst.
It saw the scores locked at 4-all at the break but the Devils struck first after the resumption through Wade Standford after Butchers lock Mick Morris was also sent to the sin-bin for a late shot on Devils No. 7 Justin Rodrigues.
The hosts couldn't notch any points despite a mountain of possession, with Devils skipper Mitch Porter putting the game to bed with 12 minutes left after swooping on a kick from winger Declan Morissey.
Skipper Jake Walsh was also sent to the bin on a forgettable afternoon for the Butchers. Coach Jarrod Costello didn't hide his disappointment at the performance at fulltime.
"I'm really disappointed with today," Costello said.
"We gave Wests too much field position through ill-discipline and when we had field position ourselves we didn't execute.
"We tried to play around them too much instead of playing straight and full credit to Wests they defended those shapes really well.
"We scored when they were down to 12 but then we went five sets without completing in a row. If you give any team field position like that youé going to struggle.
"We only leaked the one try but you you put yourself under pressure and you just can't do it. If we complete those five it's probably a different game but we just weren't good enough today."
Elsewhere in the league, Helensburgh returned to form with a 42-14 win over Berkeley while Collegians beat Corrimal 34-16 on the road.
