New South Coast restaurant: Rick Stein at Bannisters

Illawarra and Shoalhaven foodies are excited about British TV chef Rick Stein's move to take over the pans at Mollymook luxury lodge, Bannisters.Rick Stein at Bannisters will open on October 1 and feature a menu that will draw heavily on local produce and Stein's signature ingredient, seafood.Stein, the author of 19 cookbooks and owner of the famous Cornwall institution, The Seafood Restaurant, said he had long dreamed of cooking with fishing bounty from the South Coast."Ever since a memorable weekend eating Pambula oysters and flathead in Merimbula in the 1960s I've had the image of the clean blue sea and sweet seafood of the South Coast fixed in my head," Stein said."So when I was introduced to Mollymook about six years ago I knew that one day I would open up a restaurant celebrating local fish and shellfish but keeping it really simple."Bannisters general manager Peter Bacon said Stein would divide his time between Australia, Cornwall and filming his cooking shows around the globe."Rick will be setting the menu, setting the standards, and he will be bringing over his senior sous chef Julian Lloyd who will be working alongside our own chef, Russell Chinn," Mr Bacon said."Everyone is over the moon, it is fantastic for the area and a lot of the local restaurants."We are kind of hoping Mollymook, Ulladulla and Milton will turn into a bit of a great little foodie getaway for the weekend."The menu includes hot lobster with parsley, chives and tarragon; and fillet of John Dory with fresh summer truffle, slivers of new potato and wild mushrooms.
