Nathan Cripps is facing intimidation, police assault and fail to move on charges stemming from the incident, which took place in the Crown Street Mall on the afternoon of July 25.
Court documents said Cripps was inside Konekt Employment allegedly yelling at staff and made a series of threats, including that he had access to a bomb, prompting the manager to phone police.
Officers took Cripps outside, at which time he allegedly began yelling at police regarding the whereabouts of his mobile phone.
He was given a formal 'move on' direction and told to leave the area for at least six hours. However, Cripps allegedly refused to leave and continued with his aggressive behaviour towards officers.
"I'm gonna get my cousin from the Comancheros, he'd like to meet you guys, it's not a threat, I'm telling you," Cripps allegedly yelled at police.
He was arrested after a short struggle and taken him to Wollongong Police Station.
While in custody, it is alleged Cripps told one of the officers "when I get out, I am going to wait for you to finish work, get a knife and slit your guts all over the floor outside the police station".
Cripps was refused bail by the police and again by a magistrate when he fronted court last Friday, despite claiming he'd never threatened police and the allegations against him were false.
"My hands were in the middle of the air, [I was] asking for my phone, which has my medical details in it," he said.
The case returns to court later this month.
