Chef Tom Chiumento is heading a team from Caveau who will be cooking up a vegetarian feast and promoting conversation around the issue of food waste.

The team will creatively use edible surplus that might otherwise go to the tip as waste.

Mr Chiumento said he is excited about cooking with unknown ingredients. He is looking forward to taking on the challenge.

The evening is being run on a "pay as you feel" system, providing the opportunity for guests to directly support the food waste revolution.

Susie Alderman said Hidden Kitchen had been around for three years after being founded by Berbel Franse.

But she said Wednesday's dinner will be a little different.

"We've been doing the Hidden Kitchens for a while now but to have Caveau take over tomorrow night is really exciting. I can't wait.

"The doors open at 6pm and we can usually seat 35 so it is first in first served".

Hidden Harvest holds regular events to give people a chance to enjoy local produce and discuss food waste.

It is designed to raise awareness about the amount of perfectly good food that gets wasted and provide information that enabled people to make positive changes to their food habits.

Hidden Harvest and its kitchen is located upstairs in the Society City building at 274 Crown Street, Wollongong.
