Bourke St Burgers, opposite the Novotel in Bourke Street, is the brainchild of Lagoon Seafood Restaurant manager Andrew Harrison.
Mr Harrison has appointed Shane Debnam as head chef at the new eatery that will be similar to the trendy new burger bars emerging in Sydney and Melbourne. But will also be perfect for families.
It is expected to be open the week of September 9.
"It is a modern take on a burger restaurant. There are other things on the menu as well. And we are also doing breakfast," Mr Harrison said.
"It is family friendly. We have gone along that Melbourne style theme in terms of the fit-out. And we have an alleyway on the side. We have made it into a little urban alleyway to create that Melbourne style laneway vibe".
Mr Harrison said Bourke St Burgers also has a liquor licence.
"We are going to be serving craft beers, cocktails and things like that," he said.
"We are up towards Cliff Road in the old charcoal chicken shop.
"This was my idea. I love burgers as well as seafood. I thought it would be good to cater to a different market, a younger market and family market.
"I wanted to create an accessible place for people to come and eat that is more affordable.
Mr Harrison thinks it will also appeal to visitors coming from Sydney and beyond.
He said he will appoint a manager at Bourke St Burgers once it is up and running and is presently training more staff at the Lagoon.
The new eatery will be ready to hit the ground running as soon as it opens in the second week of September.

"I am employing more people. I started doing that more than a month ago. The way we are different from other burger bars is we have a fine dining chef and are bringing that kind of philosophy into a burger restaurant.
"It is going to be more than just burgers. We will also be doing things at night time".
Mr Harrison expects breakfast and lunch will appeal to families and visitors while the evening activities will attracted a younger market.
