Lorenzo’s hopes to raise bar for enjoyment

Wollongong is crying out for a well-appointed bar for older, ‘‘more sedate’’ drinkers, top restaurateur Lorenzo Pagnan says.He plans to give the market what he says it needs - a ‘‘well-appointed’’ bar with smooth jazz that allows patrons to have a civilised drink without the ‘‘push and shove’’ of busy beer barns.In keeping with the trend in new small Sydney and Melbourne bars, plates of ‘‘tapas-style’’ food will be served - a task made easy by the bar’s location as part of Lorenzo’s Diner, one of Wollongong’s finest restaurants.While the younger crowd has bars such as Yours and Owls and the Little Prince, more mature palates often go unquenched.Mr Pagnan sees his market as over-30s out for the night, and tourists from Sydney.‘‘It doesn’t have to be people over 50 ... [plenty of people] don’t want to go and mingle with a lot of noise and be pushed and shoved. ‘‘It’s part of the restaurant. You won’t get groups of blokes coming in for the buck’s party; it’s a lot more sedate,’’ he said.Beers will be in bottles only, along with a range of high-end vodkas, sloe gins, fine whiskies and cocktails.But first Mr Pagnan has to find a safecracker - not to unlock a pool of investors, but to open a large vault inside the bar which he intends to use as a wine cellar.The vault is built into the premises, courtesy of previous occupants, but was locked several years ago and was, of course, designed to be difficult to open.‘‘Nobody knows how to unlock it,’’ Mr Pagnan said.In keeping with the theme of Lorenzo’s Diner, the new bar will not have a flashy name. It will be known simply as ‘‘the bar’’.Development plans have not been lodged but Mr Pagnan intends to do so within weeks, hoping he can have the bar complete and open by May.Mr Pagnan had planned to expand to the northern suburbs with a restaurant at Thirroul, but that plan has been canned because of a lack of suitable premises.
