Winemaker Simon Hall plans to create a tasting room in Victoria Street where people can sample his range and discuss the wines.
Mr Hall said the premises would not be a bar but rather an experience where people could talk to knowledgeable staff and ask questions about the science of wine-making.
"It will be a chance to taste Simall Wines and walk out with a bottle or case," he said.
"As a winemaker, I like to educate people about the process.
"I want people to come in and enjoy an experience of learning about wine and which ones match with different cheeses and chocolates.
"There will be 30 different brands, qualities and styles of Simall Wines for sale and to taste."
Mr Hall won't be making any food at the cellar door but will rather have local produce of cheese, fruits and chocolates brought in to pair with the wines.
The Wollongong resident has owned his own wine making business for the past six years and feels the time is now right to open a cellar door.
Mr Hall is a winemaker at Two Figs Winery in Berry.
He also uses the winery to make his own range under the name Simall Wines.
Only Mr Hall's wines will be on offer at the cellar door including his popular brands Take a Gander and Southern Highlights.
Mr Hall said there would be a wine for everyone whether they liked dry whites such as Pinot Grigo or Sauvignon Blanc, a sweeter wine of Verdelho or Moscato or a dry red such as Cabernet or Shiraz.
For those with a sweet tooth, Mr Hall has chocolate port, passionfruit flavoured wine and wine spritzers.
The winemaker of 14 years has worked in vineyards in France, New Zealand and California, as well as the Hunter and Barossa Valleys. He enjoys being experimental and creative.
Mr Hall's development application was recently on public exhibition with Wollongong City Council.
He hopes that once it is approved, the cellar door will open in the new year or sooner.
The cellar door will be open Thursdays to Sundays as the business gets off the ground.
