Mr Mosaic was one of only three winners declared on the day, as strong winds wreaked havoc. The remaining five races were postponed due to safety concerns.
Mr Mosaic, ridden by Robbie Dolan, won the the Dunmore 3yo Maiden Handicap over 1000m in a photo finish from The Irish Yankee and She's Smart.
Ryan said Thursday's race did not go to plan, with the wind causing Dolan to clip the rail on the home turn.
"But he showed a lot of fight. The jockey hit the rail which would have been pretty unsettling for a three-year-old," he said.
"He's a nice enough horse, ability wise, but he still does a lot wrong. I think he's going to improve."
It was Mr Mosaic's first start after running in two open trials last month. Highlights included finishing second at Hawkesbury on September 9.
Despite being pleased with the win at Kembla Grange, Ryan admitted he wasn't sure what came next for Mr Mosaic.
"Where he gets to, I don't know. It's a bit hard to line up at the moment," he said.
"I will take him through his grades and just see."
Earlier in the day, John Thompson's Laila De Vega, ridden by Chris Williams, won the Curramore Class One Handicap over 1600m from Ivermorny.
Jockey Chris Williams rode He's Super Lucky, trained by Amanda Turner and Mauro Poletti, to victory in the Croom Class Two Handicap over 1000m.
