The win capped a stunning period for the team, with the Illawarra under 15s claiming both the field and indoor titles in the past two years.
Coach David Johnston, who has produced some of the region's top hockey products, said this is an incredibly talented group of boys.
"We're very proud of the boys, I've had this group for four years now and they've done well," Johnston said.
"They've been together since they were under 11s, they've gone all the way through to top age of the 15s and they're very good mates.
"They trust me, they listen to me and whatever plan we put in place, they play to the plan. They're very good at that, all teams that you play are different, they trust me as a friend and play to the plan."
Illawarra dominated the competition on the Central Coast, with the side sweeping their four pool matches, before defeating Grafton 5-0 in the semi-final and prevailing over a talented Newcastle side 5-3 in the final.
Luke Potter was named player of the tournament, the Dapto junior adding the trophy to the player of the tournament award he won at the NSW Field Championships in May.
Potter and many of his teammates were also rewarded for their dominance at the competition, with six of the nine players selected in the two NSW teams to contest the Australian Indoor Hockey Championships in Wollongong in January.
Michael Arthur, Thomas Duncan, Potter and Dylan Simmons were picked in the top NSW side, while Ethan Bambridge and Taz Nyrhinen made the NSW Blues team.
With all of the boys having previously represented their state at the field or indoor level, Johnston predicts the youngsters to thrive early next year.
"These boys are pretty talented, they've made state 13s and 15s field and indoor teams. They're very good players, so they'll go very well at the Australian Indoor Championships."
