Police launched an investigation after a video showing an altercation allegedly between Holmes, another woman and 57-year-old Brad Quirk went viral on social media.
Holmes was arrested on October 2 charged with assault occasioning actual bodily harm, affray and publishing a conversation obtained by a surveillance device.
She was granted conditional bail by police at the time and fronted to Wollongong Local Court on Tuesday, accompanied by her mother.
She did not enter pleas to any of the charges during a brief mention of the case before the registrar.
In the video, Mr Quirk can be seen looking dazed, with blood on his face, while a female yells at him "that's what I did to you c---" and repeatedly shouted "I'm gonna f--- you up", "You're going down c---, you're going down".
Posted on Snapchat, a young woman, starts with: "This is pretty random but I f---ed this c--- up because he was looking at me and ... [my friend], and it's her 18th so ...."
She then says "can I just take a photo of your face, look it's bleeding, that's from me".
Police will allege the woman filming the ordeal and can be heard speaking is Holmes.
The case will return to court on November.
