Joe Harb died on October 11 after a nearly-four year fight, and his family wanted to pay tribute to his courage - and also to give thanks to those who cared for him.
That's why all proceeds from the 52km ride - from Balgownie's Hone cafe to Gerringong's Sea Vista cafe - will be gifted to Wollongong Hospital's oncology ward.
"Dad was in and out of hospital for years and in that time the nurses and the doctors at C7 West took such good care of him, and all the other patients," son Romeo Harb said.
"They supported my mother Layla and my siblings and I really appreciated how they treated everyone.
"My dad too appreciated that he was treated with respect and dignity until he took his last breath."
The late Mr Harb was a "tough cookie" and a real family man according to his youngest son. He had three other children and eight grandchildren.
"He was a migrant from Lebanon and made Wollongong his home - and he worked hard to build a good life for his family," Romeo Harb said. "He was a real prankster too and was happy all the time, all the way to the end."
Gerringong Rotary is supporting the charity ride, which aims to raise $5000. People can donate to the cause, and register for the ride on the Ride for Joe Facebook page.
People can also register from 7am at the Balgownie cafe on Saturday, before the ride kicks off at 8am.
