The side - which includes Illawarra trio Ella Gibson, Brooke Welsh and Lucinda Preoo - recorded a comprehensive 6-2 win over Queensland in the grand final at Unanderra.
NSW breezed into the gold medal game with six successive wins in the pool games.
The home team came out firing in Thursday's decider, with Eva Reith-Snare scoring two goals in the first three minutes.
Lily Neilson added another goal for NSW before Queensland responded through Talicia Canty as NSW led 3-1 at quarter time.
Queensland's Gemma Nguyen scored early into the second, but NSW quickly hit back through Heidi Townsend to take a 4-2 advantage at half time.
Reith-Snare all-but put the result beyond doubt when she found the back of the net midway through the third quarter, also completing a personal hat-trick.
Lexie Pickering's goal in the last quarter was the icing on the cake for NSW.
West Wollongong's Ella said it was a great way to finish off an excellent campaign.
"We're pretty stoked, it was a pretty good tournament," the teen said.
"We played strong and diligently, and we worked as a team. It's just the best feeling and it was a full team effort to come in and win a national championship - it doesn't happen every day.
We come from all over the place, but we have this team culture that brings us all together. It feels like a good family and they're a good group of girls."
Ella said it felt extra special to secure the title victory on her home soil.
"It was so good to win in front of the volunteers and people who come and clean the fields every day, our coaches and our mentors. We're so grateful for them," she said.
"It makes the whole feeling so much better to win here."
Thursday proved to be a delightful double for NSW with the state's under-18s men's team also sealing gold.
NSW beat Victoria by 3-0 in the grand final.
Samuel Wright-Smith found the back of the net twice while Connor Tuddenham also scored a goal.
The two wins mean NSW has now won five titles at the Australian Indoor Hockey Festival since it got under way on January 4.
The NSW Blues open women's side was the state's first side to win, followed by the NSW open men's team.
NSW has also claimed the under-21s women's title.
