Christopher Paul McGuiness, 42, appeared at Wollongong Bail Court charged over an alleged assault on Friday night along the Princes Highway.
According to police facts tendered to court, McGuiness and his partner had left the Unanderra Hotel and were at a bus shelter when several men at the kebab store across the road allegedly began verbally abusing them.
His partner allegedly went over to talk to them and he tried to pull her away as the argument became "heated".
Part of the interaction between McGuiness and the men was captured on CCTV, including an alleged incident where he grabbed a metal brace from the kebab store sign and hit the victim.
The alleged victim was inside the kebab store defending himself with a metal chair at the time.
The facts also claim that, after police arrived and handcuffed McGuiness, he allegedly kicked the victim in the head three times.
His Legal Aid solicitor said the police facts suggested McGuiness was acting in self-defence and could abide by strict bail conditions, including offering a $1000 surety.
In opposing bail Sgt Tanya Pavlin pointed to McGuiness' "lengthy" criminal history and claimed there was a high likelihood of conviction.
She also stated McGuiness' alleged actions with the metal pole and kicking the victim did not support claims of self-defence.
The registrar ruled there were no bail conditions that would mitigate the risk to the community.
McGuiness remained in jail and will return to Wollongong Local Court on Monday.
