The Chiefs were slow out of the gates, Simon thrown into the mix midway through the first innings with his team trailing 2-0.
They worked their way into the match, however, to claim a 14-4 victory. Given the game was the first time many of his teammates had met, Simon is confident the side's best is yet to come.
"It took a couple of innings for us to get back into the feel of the game," Simon said.
"As soon as we all started to realise what everybody could do, we found our rhythm.
"Now we have to try get get everybody to merge together. It can be hard with a new team, it's going to take a couple of weeks for everybody to start to gel and get back into our stride after having so much time off."
The challenges don't get any easier for Dapto this weekend, the side to take on Berkeley in a grand final rematch.
The Eagles triumphed 5-0 on that occasion, however they suffered a 9-5 loss to Wollongong on Saturday.
Despite the defeat, Simon said his side will not be taking Berkeley lightly in their round two clash.
"This is going to be a big test to see how well we can bond as a team, coming up against the champs. It's definitely going to take a lot of camaraderie between us to knuckle down and get a win."
While it's only early, Simon was impressed with the standard of competition on display on opening day.
The Sydney Blue Sox pitcher has recruited a handful of Sydney and Canberra-based players to join the Chiefs, while the three other teams also boast squad-members with Australian Baseball League experience.
"This is the best quality baseball I've seen in Wollongong for a couple of years.
"The competition's only going to get stronger as it goes along. The quality of baseball towards the end of the season is going to be even higher."
