Emergency services were called to the popular lookout area about 5pm to reports someone had gone over the cliff edge.
NSW Ambulance specialist operations, SES and police rescue crews rappelled down the cliff to find a person had died shortly before 7.30pm.
The body was brought to the top before it was taken away by road.
A vacant car had also been found at the scene.
A Toll Ambulance helicopter was tasked to help search for the person.
Raymond Beecroft, a walker on the Sublime Point trail, told the Mercury he had been stopped by police officers to ask if he knew if any other walkers had gone missing.
He was asked to go back down the trail as access was blocked off.
