The truck, which was carrying seafood burst into flames while travelling north along the Princes Highway.
A Fire and Rescue NSW spokesman said the fire was fully extinguished around 8pm.
He said the fire appeared to have started in the engine area as the cabin of the truck is severely damaged.
The driver of the truck managed to get out of the cabin before the blaze took hold and is uninjured.
The seafood the truck was carried will have to be thrown out.
The fire has seen the highway closed to northbound traffic between Bombo and Dunmore.
Northbound traffic is being diverted through Minnamurra.
