The 28-year-old, of Barrack Heights, appeared briefly at Port Kembla Local Court on Wednesday, where the matter was adjourned to allow him to seek legal advice.
Documents considered by the court show the torched car - a black Holden Commodore - was the property of a Liam Johnson.
Police will allege Mendez reversed a green Subaru Liberty into the closed police station fence on Tongarra Road, about 4.50am on January 8.
He allegedly then stepped inside the vehicle compound and set fire to the Commodore before fleeing in the Subaru, which was also found engulfed in flames approximately 400m away.
Mendez was in Silverwater jail when police charged him with intentionally damaging property and intentionally destroying property by fire.
Police have previously indicated the destroyed Commodore had been in police hands for about two years, as part of an unspecified investigation.
Mendez avoided waiting media outside court and declined to answer questions about the incident.
The matter returns to court on October 21.
